Crepes - a very thin French pancake usually made with wheat flour (crêpes de froment) or buckwheat (galettes). Light, fluffy, melt in your mouth goodness. Savoury or Sweet - take your pick.
I have finally perfected buckwheat crepes. You guys are going to want to try these out!! They are both gluten free and dairy free! And they are super duper easy!
Top with yoghurt, coconut cream, fruit, peanut butter, coconut butter for a sweet option.
Or with egg, smoke salmon, veggies, cheese, avocado or some meat.
Crepes are so versatile - eat them for breakfast, lunch or dinner!
This recipe makes 8 crepes!
Ingredients
150grams of buckwheat groats or buckwheat flour
2 eggs
1.5 cups of filtered water
Pinch of salt
Olive oil, butter, coconut oil or macadamia oil to cook
Method
To your blender/food processor, add the 150grams of buckwheat, 2 eggs, 1.5 cups of filtered water and pinch of salt. Blend until well combined.
Add the mixture to a jug and cover with foil. Allow to sit for 30 mins.
Heat a crepe pan at medium heat and add your choice of oil. Add 1/4 cup of batter to the pan and swirl around the pan. Cook crepe until underside is cooked (approx 1 minute), then flip and cook for 30 seconds.
Repeat with remaining mixture until all crepes were cooked.
